Chicken and Mango stir fry

1 T peanut oil
600g chicken breast fillets, sliced thickly
1 T grated fresh ginger
1 clove garlic, crushed
1 T honey
1 tsp cornstarch
½ cup chicken stock
1 tsp sesame oil
2 medium mangoes, sliced thickly
2 green onions, sliced thickly
100 g snow pea sprouts
1 cup bean sprouts
1 T coarsely chopped fresh coriander leaves

1. Heat peanut oil in wok or large frying pan; stir-fry chicken, in
batches until browned lightly and just cooked through. Return chicken
to pan with ginger and garlic; stir-fry until fragrant. Add blended
honey, cornstarch, stock and sesame oil; stir-fry until sauce boils and
