Wayne’s Piraeus Shrimp

2 medium onions, chopped
2 large garlic cloves, chopped
2 ½ T olive oil
28 oz can tomatoes, lightly chopped
Oregano and basil
Salt and pepper
¼ C white wine
1 lb shelled deveined shrimp
8 ox. Feta cheese, crumbled

Saute onions and garlic in oil over high heat for 30 seconds. Add tomatoes and seasonings. Cook until boiling then add wine. Stir the shrimp in when liquid boils. Simmer 5 minutes or until shrimp are done. Add cheese and cook another 2 or 3 minutes.

  1. This is a Great recipe. Been making it for the past 25 years since finding it in the Harrowsmith Cookkbook. Glad to see Wayne has kept his faithful to the original. Wonderful after a cold day of skiing.
