Chicken and Coriander Fritters

Chicken and Coriander Corn Fritters

2 C corn kernels
4Tminced cilantro
1 T cornstarch
2 eggs
4 cloves garlic, minced
2 tsp. freshly ground black pepper
1/4 tsp. salt
1 tsp. sugar
1 to 2 T fish sauce
9 oz. (250 grams) ground chicken

Combine half the corn with all ingredients except chicken in a food processor until smooth. Add to the rest of the corn and the chicken and mix until well combined. Drop by tablespoons into deep-frying oil (2 to 4 inches at 350 degrees) for 3 or 4 minutes or until golden brown. Serve with:

Sweet Thai Chile Sauce

1/2 C white vinegar
1/2 C sugar
5 cloves garlic, minced
1 T dried red chiles
1/2 tsp. salt

Combine, boil for a few minutes and serve.
